Vegetarian/Vegan Chili

Here is a tasty recipe for the comfort season.

Ingredients
  • 2 tablespoons Olive Oil
  • 1.5 cups Onion (chopped)
  • 1 cup Red Bell Pepper (chopped)
  • 2 tablespoons Garlic (minced)
  • 2 Small Serrano Peppers (stemmed, seeded and minced (to taste))
  • 1 Small Zucchini (diced small)
  • 1 can Corn
  • 8oz Portabello Mushrooms (diced)
  • 2 tablespoons Chili Powder
  • 1 tablespoon Ground Cumin
  • 1.25 teaspoons Sea Salt
  • .25 teaspoon Cayenne Pepper
  • 4 Large Tomatos (peeled and chopped)
  • 4 cups del Carmen Black Beans (2 containers (16 ounce each))
  • 1 can Tomato Sauce (15 ounce can)
  • 1 cup del Carmen Veggie Broth
  • Meal Type: Chili
