Ingredients

'Tomato Base'

  • 1 clove garlic ((peeled))
  • 2lb ripe tomatoes
  • ¼ cup vegetable oil
  • 3 tablespoons red wine vinegar
  • 3 tablespoons fresh lime juice

'Vegetable Base'

  • 15oz black beans ((soaked, drained and rinsed))
  • 10oz corn
  • ¾ cup red pepper
  • 2/3 cups green pepper
  • 2/3 cups red onion
  • 2/3 cups cucumber ((peeled and seeded))
  • 4oz green chiles ((chopped))
  • ¼ cup cilantro ((chopped))
  • 1 tablespoon pickled jalapeno ((finely chopped))
  • 1½ teaspoon salt
  • 1 teaspoon pepper
  • 1½ teaspoon cumin

Directions

Step 1
To make the tomato base, with the processor running, drop the garlic down the feed tube. Core the tomatoes and roughly cut them. Process them, by batches if necessary, until smooth. Add the remaining ingredients and process to mix well.
Step 2
Combine the vegetable mixture and mix well. Add the tomato base, mixing very well.
Step 3
Check for salt and pepper and adjust as necessary.
Step 4
Serve chilled, and store in the refrigerator. For best results, chill overnight.

Ingredients

  • 2 flour tortillas (10 inch) (Flour tortillas are best.)
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1/2 small red bell pepper, chopped
  • 1 teaspoon garlic, minced
  • 1 cup del Carmen black beans
  • 1 teaspoon jalapeno peppers, minced
  • as desiredcream cheese
  • 1/2 teaspoon salt
  • 1/2 cup fresh cilantro, chopped

Directions

Step 1
Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
Step 2
Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
Step 3
Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
Step 4
Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.
